Chicken and creamy pasta with sundried tomato, basil

Boil pasta in water.

Cut Chicken breasts into half. Coat with spices(cajun, chili powder, pepper, salt, masala) then dredge in atta.
Heat olive oil in pan and cook the chicken turning when halfway cooked through and browned.

Remove, and in same pan add couple TBS butter. then add one small red onion chopped small and garlic till onion is cooked. Stir in 1/4 flour and stir few mins. Then add milk slowly and bring it to a boil. Add salt, pepper, chili powder. Stir in parmesan/romano cheese. Add in chopped sundried tomatoes and fresh basil. Turn off heat. It will thicken more as it cools.

Carrot cake

  • 2 eggs
  • 1/2 cup white sugar
  • 1/4 demera, 1/4 dark brown(or half c brown)
  • 1/2 cups vegetable oil
  • 1 teaspoons vanilla
  • 1 cup white flour
  • 1/2c wheat flour
  • 1 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • ground cinnamon
  • ground nutmeg
  • ground cardamom
  • ground ginger
  • 1/4 teaspoon salt
  • 1 cups grated carrots
  • 1/2c of crushed pineapple(I used an individual "fruit cup")
  • 1/4 cup chopped almonds(or any nuts)
  • 3/4 cup chopped dates or raisins(optional)
Blend first four in a large bowl.
Combine the dry ingredients in another bowl and add to wet.
Add in the carrots, almonds, pineapple

Pour into greased and floured 9x9 pan.
Bake on 350 for about 20-25 mins

Granola Bars

Finally, Ive made homemade granola bars. They are pretty good and easy, so hopefully I can stop buying store bought! I cant wait to play with different ingredients too.

Mine was based roughly on this one and one by Alton brown.

Im terrible at measurements but heres a rough estimate, so maybe I can make it again someday!

3 cups of rolled oats
1/2c whole wheat flour
1/3c chopped almonds
1/4c golden raisins
1/4c coconut grated
1/4c dark chocolate chopped
3T brown sugar
cinnamon, cardamom, nutmeg, ginger powders

Mix these in a large bowl.

2T butter(melted)
1/3c oil
1/2t vanilla
1/3c honey

Add this to the dry mixture and stir it well.

Press into 9x11 pan, using another pan, press it very tightly.
Bake on 325 for abt 20-25 mins.

Cool 15 mins and cut with oiled knife. Let it cool completely before removing from pan!
