banana coffeecake

Found this recipe here and it was fabulous!!

Changed a bit and it was still PLENTY sweet enough! Not sure if layers were necessary.

Streusel topping:
Stir together 2/3 c choco chips (I use these), 1/2c brown sugar, 1tbs cinnamon, 1/2c chopped walnuts(or stir them into batter)

1.5 c flour
1 scant tsp baking soda
1 scant tsp baking powder
1/4tsp salt

2-3 bananas mashed (3 gives alot of banana flavor)
1/4c buttermilk or yogurt

Beat 6TBS butter(soft) with
1/2c sugar
1 egg

Then mix in the banana and yogurt. Stir in flour till just mixed. Don;t overbeat.

In buttered 8x8 dish, pour half of batter. top with half of streusel. Repeat. (Or, what I might do next time is stir nuts and half of choco chips into the batter, and use 1/3c brown sugar 1/3c choc chips as the topping)

Bake 350 for 45 minutes.
