Zucchini tomato rice

1 zucchini cubed
2 green chilies chopped
1 large tomato chopped


Fry mustard seeds, cashews, curry leaves, green chili, ginger. Add in the zucchini fry few mins. then add the tomatoes, salt, cover with lid until tomatoes are cooked down and mashed. Add garam masala, then stir in leftover rice. cook few mins. sprinkle lime juice and coriander leaves(optional).

sakkarai pongal


fry cashews and golden raisins in ghee.
roast 1/2c moong dal
add 1c rinsed rice(ponni)
add 1c milk and 5c water.
pinch of saffron
pressure cook
take 1- 1.5c sugar/brown sugar/ jaggery and 1/2c water and heat it to dissolve
stir in cardamom

Add sugar syrup to cooked rice/dal. Stir in cashews and raisins. Add ghee if desired.

mor kuzhambu, karela fry

Mor kulambu

Cut white pumpkin in cubes. cover and boil in little water.
Grind green chili, coconut, cumin seeds, and 1t besan, optional, with water(can use water from the veg).
Add coconut mixture to the veg. Then add buttermilk, salt. Heat on med-low flame just until it boils.
Fry methi seed, red chili, mustard seed, curry leaf, hing, and turmeric in oil. let it cool 1 min then add.

Karela fry

1 onion sliced thin lengthwise
2-3 bittergourd sliced thin rounds
mustard seed, curry leaf, red chili,
salt

(optional)Salt the karela and keep aside one hour. Rinse well.
Fry the seasoning in oil, then add onions. when onions are half cooked add the bittergourd and salt. Cover for 5 mins, then finish frying without lid until crispy.

Kale with moong dal


I never really used Kale before but I do try to eat lots of green leafy vegs. This recipe couldnt be more simple.

1cup moong dal
3cups water
1bunch of kale, chopped
1 sm tomato
1 sm red onion
turmeric

put all in pressure cooker for 1 whistle. Add a little tamarind and boil.

do seasoning with mustard seeds, channa dal, green chili.

Making good use of leftovers : paneer fried rice


When we get our favourite, gobi manchurian, from the local indian-chinese restaurant, it always comes with half the box full of onions and green chili which taste great, but how much can you eat by itself?

So I fried a small capsicum, and some paneer cubes in sesame oil. Added the flavourful onions, spring onions, and green chilies from "the box" and stirred in cooked(or leftover) rice. Fry for a few mins and add soy sauce. Fast and Frugal!

Ashwini of Food for thought writes "everything tastes better with cashews" and of course she is right! Tried out something similar to this lovely recipe by Anthony, aka worlds most eligible bachelor but used zucchini instead (instead of bottle gourd, not instead of... oh nevermind). And cashews added... Yum! Had with rice and Bengali dal. Im not sure if its "authentic" but to me that means masoor dal with panch phoron, red chili, a splash of lime and sprinkle of coriander leaves :p


While Im at it, I also tried out this recipe of dhodak from Ashwini, again with zucchini. Its definitely one Ill be making again and again!
